2 Easy Last Minute Truffle Recipes (Oreo + Fruitcake)
Want to make something special for Valentines Day? Making these truffles can be done so quickly you can even do it the night before. They are super easy!
First up: Mini Fruitcake Truffles
– 1oz (or 6 squares) chocolate chips
– 1c fruitcake
– 2 tablespoons orange liqueur (optional)
– sprinkles / sugar / cocoa powder as decoration
– 3 tablespoons butter
1. Chop chocolate into small pieces. In saucepan over very low heat, melt chocolate and butter until blended and smooth.
2. Stir in orange liqueur and fruitcake crumbs; chill for 2 hours or until firm.
3. Shape into 1 inch balls and chill at least 20 minutes. Before serving, roll in icing sugar or coca powder and chill for 20 minutes.

Y’all know and love the humble Oreo. But if you blend two packets of them (approx 40 oreos) with a packet of cream cheese (200g) and cover in melted chocolate, you reach heaven!
– 2 (8oz packages) baking chocolate / melted
– 1 (8oz package) cream cheese / softened
– 1 pack Oreos
1. Crush 9 of the cookies to fine crumbs in food processor; reserve for later use. (Cookies can also be finely crushed in a resealable plastic bag using a rolling pin.) Crush remaining 36 cookies to fine crumbs; place in medium bowl. Add cream cheese; mix until well blended. Roll cookie mixture into 42 balls, about 1-inch in diameter.
2. Dip balls in chocolate; place on wax paper-covered baking sheet. (Any leftover chocolate can be stored at room temperature for another use.) Sprinkle with reserved cookie crumbs.
3. Refrigerate until firm, about 1 hour. Store leftover truffles, covered, in refrigerator.
