Summer Lemonade Series: Cucumber Pineapple Lemonade
2 cups of lemon juice (approx. 18 lemons)
3 cups of simple syrup
4 cups of water
1 pre-cut pineapple
1 or 2 cucumbers
Simple Syrup
Simple Syrup is easy to make- even for those who aren’t so great in the kitchen! It is equal parts sugar and water, and so what you will need to do first is measure out how much water and sugar you will be using (for this recipe- 4 cups of water and 4 cups of sugar). Next, put the the water in pot on the stove and bring it to a boil. Once it is boiling, slowly add the sugar and stir to dissolve. You may have to put the lid back on the pot and let it simmer for a while so that all of the sugar can dissolve. After all of the sugar has dissolved, pour the simple syrup in a container and let it cool off in the refrigerator so that it will be ready to put in the lemonade.
Cucumber Pineapple Lemonade
- squeeze 2 cups worth of lemon juice into a pitcher
- mix in the juice from the bottom of the container of the pre-cut pineapple (you can buy a whole pineapple if you wish, but it is a lot more work to get the juice out)
- squeeze and mix in the remaining juice from the pineapple
- cut up the pre-cut pineapple into tiny pieces, then mix the pieces into the pitcher (you don’t have to use the entire pineapple, I personally usually mix in most of the pineapple)
- peel the cucumber
- slice the cucumber horizontally (long-ways) mulitple times
- cut the cucumber into fine pieces
- make sure you mix in any cucumber water that may collect on the cutting board from chopping up the cucumber
- mix in 4 cups of water
- mix in 3 cups of simple syrup
ADDITIONAL NOTES:
- This recipe is very flexible to individual tastes (my mom thinks this version is too sour and my dad says its too sweet…). If you like a sweeter lemonade, simply make and add more simple syrup. If you like a more sour lemonade, just make and add more lemon juice and maybe add less simple syrup.
- This lemonade makes a great mixer! (so I’m told)
