Prep Time: 1 hour
Cook Time: 2.5 hours
Total Time: 3 hours (you can cut some time by prepping while bread is cooking)
Servings: 8-10
Ingredients:
- 3/4 cups (1 1/2 sticks) unsalted butter, plus a little for the baking dish
- 1 lb quality white bread, torn into 1-inch pieces (about 10 cups) (you can always make this GF by using GF bread)
- 2 1/2 cups chopped yellow onion
- 1 1/2 cups sliced/chopped celery
- 1/2 cup parsley
- 2 tbsp chopped fresh sage
- 1 tbsp chopped fresh rosemary
- 1 tbsp chopped fresh thyme
- 2 tsp kosher salt (or regular salt)
- 1 tsp freshly ground black pepper (or regular black pepper)
- 2 1/2 cups chicken broth (preferably low-sodium)
- 2 large eggs
- Preheat oven to 250 F.
- Butter a 13x9x2″ baking dish and set aside.
- Scatter torn 1″ pieces of bread in a single layer on a rimmed baking sheet.
- Bake, stirring occasionally, until dried out (about 1 hour). Let cool and then transfer to a very large bowl.
- Meanwhile, melt 3/4 cup butter in a large skillet over medium to high heat.
- Add in onions and celery, stir often until just begins to brown (about 10 minutes).
- Add to large bowl with bread, then stir in herbs, salt and pepper.
- Drizzle in1 1/4 cups broth and toss gently. Let cool.
- Preheat oven to 350 F.
- Whisk 1 1/4 cups broth and eggs in a small bowl.
- Add to bread mixture, mix slowly until thoroughly combined.
- Transfer to prepared baking dish (Step 2), cover with foil, and bake for about 40 minutes, or until the center of the stuffing is 160 F (you can use an instant-read thermometer for this)
- Once it is at 160 F, bake stuffing, uncovered, until set and top is browned and crisp (about another 45 minutes)
Want to prepare ahead of time? You can chill the stuffing after step 12, then before actual Thanksgiving dinner, do step 13, but add 10-15 minutes on the 45 minute cook time.
