Thanksgiving is next week and if you’re still looking for some yummy side dishes, let me suggest roasted butternut squash and brussels. It’s easy, healthy, and different than most other Thanksgiving side dishes. So if you want to put a spin on your sides, give this one a shot. If not, save it for another night because you will love them! 

 
  • Brussel Sprouts
  • Butternut Squash 
  • Garlic
  • Olive Oil
  • Feta Cheese (optional)

1. Pre-heat oven to 400 degrees

2. Sweat garlic in olive oil 

3. Cut brussel sprouts into quartered pieces

4. Cut butternut squash into pieces

5. Toss brussels and squash with garlic olive oil

6. Line a baking sheet with aluminum foil & evenly distribute brussels and squash on baking sheet
7. Cook for about 30-35 minutes (it may take longer, you’re roasting so you’ll want crispy brussel sprouts and the butternut squash soft)

8. Top with feta cheese!

9. Eat up!
